I can say that personally in my dairy factory I use alkaline-based detergents most often, as the main type of contaminants in such a food production facility are organic. But you should know that they are very highly reactive and should be used with caution and only on alkali resistant surfaces.

I have tried many different cleaning products and, based on my experience, I can only give one important piece of advice: when choosing a cleaning product for the food industry, make sure that it does not contain harmful components and consists only of tested and environmentally-friendly ingredients.
