Supper Medley
( A simple way to make a casserole in 1 pan and one of Nanie Rie classic dishes!)
1 pound fresh ground turkey
2 tablespoons cooking oil
1 medium onion, chopped
1/2 cup chopped green pepper
1 can(4 ounce) mushroom stems and pieces
1 8 ounce package noodles (I use whole wheat noodles)
1 cup shredded cheddar cheese
1 teaspoon salt
pepper to taste
1 can(28 ounce) tomatoes, broken up
Saute turkey in oil in a large skillet until lightly browned. Stir in onions, green pepper and mushrooms.
Arrange dry noodles over mixture. Sprinkle with cheese and seasonings. Pour tomatoes over all. Do not stir.
Cover. Bring to a boil. Reduce heat;simmer for one hour, but keep checking so it doesn't burn on the bottom.

In a bowl, combine the flour, salt and pepper. Toss with the beef in the bowl until coated. Heat the oil in a large skillet over medium high heat. Brown half of the meat at a time on all sides. Add more oil if needed. Once browned add water and cover for about 5 minutes or until tender. Remove from heat and let stand for 5 minutes before serving.
