Marinated Spare Ribs
I 've cooked this alot, ever since reading Peter Jenkin's book about walking across America, but this recipe actually comes from China!
Marinated Spare Ribs
One rack of pork or beef ribs, about 3 to 31/2 lbs. Remove the flap and extra fat from the ribs, then score all over with a sharp knife.
Mix all of this in a bowl:
2 TB. oyster sauce 2 TB. light soy sauce 2 TB. honey 3/4 tsp. salt 2 Tb. dark soy sauce pinch of white pepper
Line baking pan with foil, lay rack of ribs inside. Using hands, rub the mixture into the rack. The ribs must marinate for at least 4 hours. You may prepare them overnight and marianate them in the refrigerator, but they must be at room temp. at the time of cooking.
Preheat oven 15-20 min. Broil ribs for about 30-50 min. You may have the add water if the sauce begins to evaporate. During the broiling process baste the ribs several times and turn rach over several times as well. 4-6 servings. Delicious!
