Several chicken thighs or breasts

 

Jar of Picante sauce or any salsa

 

Box of Near East Spanish Rice or other boxed Spanish rice mix

 

Just place thighs or breasts in crockpot and pour salsa all over the meat.  Turn on high for 3 to 3 1/2  hours max.  Then sprinkle rice and spices from the box all over the top the last 30 minutes before you want to eat it.

Super easy!  The rice will be absorbed by the liquid already in the crockpot.
