Ginger bread
I just had this tonight, my aunt had made gingerbread using the below recipe. This is the best gingerbread I have ever had.

Gingerbread ( Tom Douglas Recipe)

2 eggs
1 cup of melted butter
1 cup of sugar
zest of one orange
1/2 cup of molasses
2.5 cups of flour
2 teaspoons of baking soda
2 teaspoons of ginger
1 cup of brewed coffee
1 teaspoon of cinnamon
1 teaspoon of salt
1/2 teaspoon of nutmeg

Preheat oven to 350 degrees. Butter and flour in a 10 inch cake pan. In a large bowl, combineeggs, melted butter, sugar and orange zest. In another bowl, cobine coffee and molasses. In another bowl, sift together flour, baking soda, spices and salt. Alternately add the coffee-molasses mixture and the dry ingredients to the egg-sugar mixture. Once the batter is mixed pour into prepared pan. Bake 40 - 45 minutes or until done. Allow cake to cool in pan 5 to 10 minutes and then remove from pan.

It is really good!  It should be with all that butter in it! My sister Debbie made it when she came down last week!
