South of the Border Chili Casserole(easy to prepare)
1 3 oz. pkg. cream cheese, room temp.
3/4 c. cottage cheese
1/2 c. dairy sour cream
3 tb. minced green onion
2 tb. diced green chilies
1/4 tsp. salt
1 c. chili and beans (8 oz. can)
1 2-1/4 oz. can sliced ripe olives
2 c. whole corn chips
1/2 c. crushed corn chips
1/2 c. grated sharp cheddar cheese
Preheat oven to 350. Butter a 1 1/2 qt. casserole; set aside. Blend cream cheese until smooth. Add cottage chesse, sour cream, onion, green chilies and salt; mix well. Combine chili and beans with olives. Layer in buttered casserole, in order: 1 c. whole corn chips, cheese mixture, 1 c. whole corn chips and chili-oive mixture. Sprinkle with crused corn chips. Bake 25 min. Remove from oven; sprinkle with chesse. Bake 5 to 8 min. longer until cheese is melted.
