Cheesy Stuffed Sausage Pasta Bake
1 lb. rigatoni or penne pasta
1 pkg. Jimmy Dean Regular Flavor Pork Sausage Roll (I use the one with no MSG)
1 jar(24 oz.) spaghetti sauce
2 tsp. dried Italian seasoning
1/4 tsp. salt
1 container (15 oz) ricotta cheese
2 c. (8 oz) shredded mozzarella cheese, divided
3 tbsp grated Parmesan cheese
2 tbsp chopped fresh parsley, optional
Directions:
1. Preheat oven to 350 degrees. Cook pasta and remove from heat 1 min. before suggested cook time; drain and set aside.
2. Cook and stir sausage in large skillet over med-high heat 8-10 minutes or until thoroughly cooked. Drain and return to skillet. Stir in sauce, Italian seasoning, salt and cooked pasta. Layer half of pasta mixture in a greased 13x9 in. baking dish.
3. Mix ricotta and 1 c. of mozzarella and Parmesan cheese. Spread over pasta. Top with remaining pasta and mozzarella cheese. Sprinkle with parsley.
4. Bake for 30 mins. or until hot and cheese is melted.
