Ma's Chicken Soup
-from Lisa and Becky of "At Home America"

This makes a huge amount, so you can adjust the amounts.

3 whole chickens (I used 1 large one)
2 lg. white onions (I used one)
1/2 c. celery flakes
1 c. parsley flakes
1 lg. pkg. soup noodles
1/2 c. McCormick's Salt-n-Spice (I used 1 packet McCormick's White Chicken Chilie Seasoning Mix)
1/8 c. salt
1/8 c. pepper
1/8 c. basil
1 pkg. baby carrots
1 bunch celery (I used 1 pkg frozen spinach)
1 pkg. frozen cut green beans
1 pkg. frozen corn
1 lg. pkg fresh sliced mushrooms
2 lg. cans chicken broth ( I used 1 box of Swanson's chicken broth-MSG free)

Boil chicken(s) in water with one sliced white onion and 1/2 of the Salt-n-spice until chicken is completely cooked.  Drain chicken, save broth after boiling and
de-bone.  In remaining broth, add boxed chicken broth, carrots, celery, mushrooms, and 1/3 to 1/2 of chicken and spices.  Simmer for approx. 90 min.  Add all remaining ingredients. Simmer approx. 60 min.  Makes 1 heapin' pot of soup!!
