Set Date/Time format:
In 12 Hour format the hours will be displayed as 1 through 12 with “a.m.” and “p.m.”

1 cup all purpose flour
½ cup oat meal
1 tsp baking powder
1 tsp baking soda
½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
½ tsp salt
1 cup granulated sugar
½ cup vegetable oil (I used canola)
2 large eggs
1 tsp vanilla extract
¾ cup grated carrots
¾ cup grated zucchini
¾ cup grated apples
½ cup chopped nuts (optional)
½ cup raisins (optional, I used golden)
Preheat oven to 350 degrees. Butter an 8 inch square pan, a little flour and sugar can be used to cover bottom and side.
In a large bowl mix together flour, oat meal, baking powder, baking soda, cinnamon, ginger, nutmeg and salt.
In another bowl beat sugar, oil, eggs and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ones, mixing just until combined.
Fold in carrots, zucchini and apples and if using nuts and raisins.
Pour into square pan and bake for 55 - 60 minutes, plus extra if necessary. I turn the pan after 20 minutes. Check with a toothpick that comes out dry for done baking.
