Gingerbread (Tom Douglas Recipe)
Gingerbread ( Tom Douglas Recipe)
2 eggs 1 cup of melted butter 1 cup of sugar zest of one orange 1/2 cup of molasses 2.5 cups of flour 2 teaspoons of baking soda 2 teaspoons of ginger 1 cup of brewed coffee 1 teaspoon of cinnamon 1 teaspoon of salt 1/2 teaspoon of nutmeg
Preheat
oven to 350 degrees. Butter and flour in a 10 inch cake pan. In a large
bowl, combine eggs, melted butter, sugar and orange zest. In another
bowl, combine coffee and molasses. In another bowl, sift together flour,
baking soda, spices and salt. Alternately add the coffee-molasses
mixture and the dry ingredients to the egg-sugar mixture. Once the
batter is mixed. pour into prepared pan. Bake 40 - 45 minutes or until
done. Allow cake to cool in pan 5 to 10 minutes and then remove from
pan.
Note: I made this in 7 small Christmas shape pans and baked it 30 minutes. I put some powdered sugar on the tops for a snowy effect. Delicious!
