Pineapple Lentil Soup
Pineapple Lentil Soup

1 lb. lentils
2 yellow onions
3 tomatoes
2 tsp.minced garlic
? salt
pineapple chunks(fresh or canned)

Cook 1 lb. lentils with 8 c. water for about 45 minutes.  Smash tomatoes in molcajete (mortar) with the minced garlic
Chop up onion in food processor with tomatoes and garlic.  Puree until smooth consistency. Add liquid to lentils and continue cooking until hot.  Add pineapple chunks or crushed.

Oscar, when did you put the salt in?  Were we supposed to put olive oil in? Make any corrections you want; gracias!!
